For strengthening royal icing: take a small amount of gum trag on the end of a knife - add to a small cup of royal icing & mix well. Perfect for sticking decorations together or onto cakes. Also used in the making of mexican paste.

Rice paper can be used in many ways to create great effects on cakes. Click on the photo to see stage curtains cut out of the pink rice paper - we used an edible ink pen to outline the curtains and pink lustre spray to create some depth of colour. On the mermaid cake we cut waves out of the blue rice paper and sprayed them with the blue and green lustre sprays to create a sea of colour. Just remember, too much moisture and rice paper will dissolve - here we just wrapped a ribbon around the bottom of each cake and slipped the rice paper into it. When using edible glue or icing to attach rice paper - make sure the surface is just a little tacky and not wet.

If you are attaching shapes around the side of a cake, you can wrap a ribbon around the base of the cake and slip the rice paper into it.
