USE AND CARE OF SUGAR DIAMONDS

Sugar diamonds look absalutely fantastic on cakes but it is important that you follow the handling and storage guidelines so that they do not mist over as they are affected by humidity.

Try not to touch them directly with your hands - use tweezers and attach them to a cake using stiff royal icing in the same colour as the coating of the cake. If possible, place them on as near to the event as possible or even at the last minute to avoid exposure to the atmosphere.
